American Blood Red Ale (American Red Ale)

-This is a partial-mash recipe. All grain brewers should replace the 7# of extract with 10# of American Two-Row

Tasting Notes:

This ale has a dark red body and a huge cream colored head that laces up beautifuly. The aroma is a citrus hop blast, grapefruit, lemon trees, and trix cereal jump out. This is an American style red ale that is extremely hop forward. The flavor is defined by the fresh citrus flavors of the cascade and amarillo hops, the bittering power of the centennial provides a solid backbone for the flavor and aroma hops. This is pure nectar for the hop head. The bold hop presence is balanced with the dark malt backbone and the richness of the Belgian specialty grains. The bready malt flavors are further aided by the English Ale yeast. This is comparable to commercial offerings such as Red Rocket by Bear Republic Brewing and The Believer by Ninkasi Brewing, though the commercial examples don't provide nearly the hop attack power that the American Blood Red does. Because of the hop forward nature of this beer, it will taste best about one month after bottling and should be consumed within four months of brewing, because the bright hop flavors and aromas will fade rapidly. This brew is a protest to the hop shortage and a celebration of Pacific Northwest brewing tradition.

1# Cara Vienna

3/4# Cara Munich

1/2# Belgian Special Roast

3/4# Belgian Aromatic

3/4# Rye

7# Pilsen Extract (Light Dry)

Hop Bill:

2 oz Centennial @ 60'

2 oz Amarillo @ 15'

2 oz Cascade @ 15'

2 oz Cascade @ Flame Out

2 oz Cascade dry hopped in secondary fermenter

Yeast:

English Ale (WLP002)
